Analisis GC-MS Senyawa Aktif Antioksidan Fraksi Etil Asetat Buah Andaliman (Zanthoxylum acanthopodium)

Abstract

Andaliman contains compounds that have antioxidant activity that is very beneficial and health plays an important role in maintaining the quality of food products from various damage such as rancidity, changes in nutritional value, as well as color changes, and food odors. This research was conducted to determine the components of the antioxidant compound of andaliman fruit ethyl acetate fraction by GC-MS method. The interpretation of the GC-MS mass spectrum was carried out using the WILLEY9THN 08.L. database. The results of the analysis of the active antioxidant ethyl acetate fraction containing bicyclo 3,1,1 hept-2-ene (4.65%), 5-hepten-2-one-6-methyl- (2.08%), 1,6-octadiene , 7-methyl-3-methyl- (1.08%), cyclohexene 1-methyl-4- (32.45%), cyclohexene-1-methyl-4- (1-methy ..) (1.87% ), 1,3,6-octatriene, 3,7-dimethyl- (4,73%), 6-octenal, 3,7-dimethyl-R (10%), 6-octen-1-OL, 3,7 -dethethyl-R (2.80%), 2,6-octadient-1-ol, 3,7-dimethyl-R (4.62%), 2,6-octadiene, 2,6-dimethyl- (1, 19%), 2-proponoic acid, 3-phenyl-meth (1.20%), 2,6-octadient-1-ol, 3,7-dimethyl (21.05%), 8-isopropyl-1-methyl5 -methylene (1.57%).
